Butter Toffee


  • 1 lb salted butter
  • 1 c water
  • 2 sugar
  • 1 T corn syrup (or 1 T honey & 5-10 drops of vanilla extract)
  • 1 7oz Hershey bar
  • (if desired) chopped walnuts


  • On medium heat, melt together butter, water, sugar and corn syrup in a large sauce pan
  • Bring to a boil stirring constantly until the mixture reaches “Hard Crack” on a candy thermometer (takes ~40min)
  • Prepare jelly roll pan with aluminium foil and lightly coat with cooking spray
  • Pout mixture onto the pan and let cool for 5 min
  • Break chocolate into pieces and melt on top, spread evenly
  • Add nuts if desired
  • Let cool completely before breaking apart
