Taco Soup

Ingredients

  • One can of corn
  • 1 15.5oz can light red kidney beans
  • 3 lbs of ground turkey
  • 1 4.5 oz can of chopped green chiles
  • 1 16oz bag frozen onions and peppers
  • 1 bunch green onions
  • 1 packet taco seasoning mix
  • 1 packet ranch seasoning mix
  • 2 tbsp chicken boullion
  • 1 14.5oz can stewed tomatoes with onions, celery, and green peppers
  • 1 14.5oz can diced tomatoes with onions, celery, and green peppers
  • 1 15.5oz can of black beans

Directions

  1. Cut up green onions into large diced pieces
  2. sCombine all ingredients in crockpot.  Do not drain cans
  3. Cook on low 6 hours.
  4. Top with below ingredients

Top with

  • Bite size tortila chips (can be broken and mixed in each individual serving)
  • Shredded cheddar
  • Light sour cream

German Potato Soup

Ingredients:

  • 1 Ham, cubed
  • 5 medium/small Yukon Gold potatoes, cubed
  • 1/2 celery heart, chopped
  • 1/2 bag of frozen onions
  • 1 carton mushroom slices
  • 1/2 cup Barley
  • 5 cups water
  • 1.5 Tbsp Chicken bouillon
  • 1 hefty bunch of green onions
  • 1 12oz can evaporated milk
  • Seasoning: Thyme, pepper, minced garlic

Directions:

Combine all except milk in slow cooker.  Cook for 6 hours on low.  Stir in evaporated milk.
